How to Make Zesty Spiced Beer Can Chicken

Step 1 Prep your grill for indirect heat. Remove the top rack if needed for space. Keep the lid closed while cooking. This keeps the heat steady for juicy chicken.
Step 2 Clean the chicken and pat it dry. Trim excess fat with kitchen shears. Dry skin helps the spices stick better. Place it on a foil-lined baking sheet.
Step 3 Mix all the spices in a small bowl. Rub them under and over the skin. This adds flavor to every bite. Don’t skip the skin loosening step!

Step 4 Drink some beer to empty 1/3 of the can. Add extra holes for steam to escape. Stand the chicken on the can. It’ll look like a backyard showstopper.
Step 5 Grill over indirect heat for 2 hours. Check every 30 minutes for flare-ups. Let it rest 10 minutes before carving. *Fun fact: Resting keeps it juicy.* (Hard-learned tip: Use a drip pan under the beer can. It catches grease and prevents flare-ups.) Storing and Reheating Your Chicken

Let’s talk leftovers. Store cooked chicken in the fridge for up to 3 days. Use airtight containers to keep it fresh. Freeze for longer storage—just wrap tightly in foil or plastic. Reheat in the oven at 350°F until warm. *Fun fact*: The beer keeps the meat juicy even after freezing. Batch-cooking tip: Double the spice mix and save half for next time. This cuts prep work in half. Why this matters? Busy weeknights get easier with ready-to-go flavors. Who else loves a shortcut? Share your favorite time-saver below!

Description

Experience the bold flavors of this Zesty Spiced Beer Can Chicken with Cola BBQ, featuring a perfectly seasoned chicken cooked upright on a beer can for juicy, flavorful results.

Ingredients

Instructions

  1. Prepare the grill. Make sure you have plenty of propane or charcoal. You will have this baby on there for 2 hours so plan accordingly. Heat the grill to high heat. You might need to remove the top rack so the chicken will have enough room to sit upright with the lid closed.
  2. Clean 1 large whole roasting chicken by removing any excess fat or skin using kitchen shears and removing the giblets. Pat it dry with a paper towel and set on a foil lined baking sheet (check to make sure it fits on the grill).
  3. In a small bowl combine the 3 teaspoons coarse sea salt, 3 teaspoons light brown sugar, 3 teaspoons smoked paprika, 2 teaspoons ground black pepper, 1 teaspoon onion powder and 1 teaspoon garlic powder.
  4. Starting at the neck, gently loosen the skin from the breast down to the drumsticks with your fingers. Massage the spice mixture underneath the skin over then over the outside of the skin.
  5. Open the 1 can of beer and take 2-3 big swigs (about 1/3 of the can). Using a can opener make an additional opening on the opposite side of the can from the pop top.
  6. Take the beer can and shove it up the body cavity (or set it directly into the grill holder). The chicken will be sitting up with the beer can sitting on the aluminum foil lined baking sheet. Tuck in the ends of the wings (flappers). The chicken will look like it is dancing with its arms behind its head.
  7. Place the entire baking sheet with chicken onto the grill over indirect heat. Close. Keep closed, peeking to make sure it is still upright every 30 minutes. You might get a few flare-ups if the fat drips onto the flames, but hopefully the baking sheet will catch most of it while allowing the chicken to stay standing upright through the whole cooking process.
  8. If you are making Cola BBQ Sauce, start it up now.
  9. Remove the chicken at 2 hours and allow to stand for 10 minutes before carving. The chicken should have an internal temperature of 160°F. Carry over cooking while resting will bring it to 165°F.
  10. Serve with Cola BBQ Sauce or your favorite BBQ sauce.

Notes

For best results, use a beer with strong flavor (not light beer) and ensure the grill maintains consistent heat throughout cooking.
