A Bite of History

Popcorn chicken became popular in the 1990s, thanks to fast-food chains. But home cooks have been making bite-sized fried chicken for generations. *Did you know cornflakes were originally invented as a breakfast cereal?* Now they’re a secret weapon for crispy coatings. What’s your favorite way to use them?

Step 2 Whisk eggs, milk, and spices in a bowl. Crush cornflakes lightly in another bowl. Keep both ready for dipping. (Hard-learned tip: Crush cereal finely for extra crunch.)
Step 3 Dip flour-coated chicken into the egg mix. Then press into cornflakes. Make sure each piece is fully covered. Lay them on a baking sheet.
Step 4 Bake at 400°F for 10 minutes. Flip and bake 5-8 more minutes. For air frying, spray chicken and cook 3 minutes per side. For frying, heat oil to 350°F and cook 3-4 minutes. Keep It Fresh or Freeze for Later

Store leftover popcorn chicken in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 2-3 minutes to keep it crispy. For longer storage, freeze cooked bites in a single layer on a tray before transferring to a bag. *Fun fact: Cornflake crumbs stay crunchier than breadcrumbs after freezing!* Why this matters: Proper storage keeps food safe and tasty. Want to batch-cook? Double the recipe and freeze half for busy nights. Do you prefer baking or air frying for reheating?

Fix Common Popcorn Chicken Problems

Issue 1: Coating falls off. Fix: Press cornflakes firmly onto the chicken after dipping in egg. Issue 2: Chicken dries out. Fix: Don’t overcook—use a meat thermometer (165°F inside). Issue 3: Not crispy enough. Fix: Spray more oil before baking or air frying. Why this matters: Small tweaks make big flavor differences. My neighbor’s kids once declared soggy chicken “a crime”—crispiness is key! Which issue do you face most often?

Ingredients

Instructions

  1. Coat Chicken: Place chicken pieces in a bowl or ziplock bag and add flour, stirring or shaking to coat completely. Set aside.
  2. Add eggs, milk, salt and pepper, garlic powder and paprika to a bowl and stir to combine. Set aside. In another shallow bowl combine crushed cornflakes.
  3. Dip each piece of flour-coated chicken into the egg mixture, followed by the cornflakes, gently pressing the cornflake mixture into the chicken.
  4. To Bake: Place chicken on a parchment lined baking sheet and bake at 400 degrees F for 10 minutes. Flip chicken and bake for another 5-8 minutes or until cooked through.
  5. To Air Fry: Spray the bottom of the fry basket with nonstick cooking spray and place half of the chicken pieces into a single layer in the basket. Generously spray the top of each piece of chicken with cooking spray. Air Fry at 360F for 3 minutes. Open air fryer, flip chicken pieces to the other side, and spray tops again with cooking spray. Increase air fryer temperature to 400F degrees and cook for 2-3 more minutes, or until crisp and cooked through.
  6. To Fry: Heat a few inches of vegetable oil in a pot. Once hot (350 degrees F), work in batches to lower the chicken into the oil and cook for 3-4 minutes, until cooked through. Remove to a paper towel lined plate.
  7. Serve warm with BBQ sauce, Hot Honey, ranch, Chick-fil-A sauce, or another favorite dipping sauce.

Notes

For extra crispiness, let the coated chicken rest for 5-10 minutes before cooking.
