Cook the pasta until just tender. Drain it but skip rinsing to keep the starch. Starch helps the sauce stick. Set aside while you prep the rest. (Hard-learned tip: Undercook pasta by 1 minute—it softens more in the oven.)
Step 2 Fry bacon until crispy in a large skillet. Remove most grease but leave a bit for flavor. Crumble bacon into bits for topping. Save some for mixing into the pasta later.
Step 3 Melt butter in the same skillet. Whisk in flour and cook 2 minutes. Slowly add milk, then the cornstarch-half-and-half mix. Stir in mustard, seasonings, and cheese until smooth.
Step 4 Toss pasta with the sauce and half the bacon. Pour into a baking dish. Top with parmesan, breadcrumbs, and remaining bacon. Bake until bubbly and golden. Storing and Reheating Tips

Let’s keep that mac and cheese creamy! Store leftovers in the fridge for up to 3 days. Use an airtight container to lock in moisture. Reheat in the oven at 300°F for 10 minutes, or microwave with a splash of milk. *Fun fact: Bacon stays crispier when reheated in the oven.* Freeze portions for up to 2 months—thaw overnight before reheating. Batch-cook? Double the recipe and freeze half for busy nights. Why this matters: Proper storage keeps flavors fresh and textures perfect. Ever tried freezing mac and cheese? Share your tricks below!

Common Issues and Fixes

Sauce too thick? Add a splash of milk while reheating. If it’s too thin, mix 1 tsp cornstarch with cold milk and stir in. Crust not crispy? Broil for 1-2 minutes at the end. Why this matters: Small tweaks make big differences in taste and texture. My neighbor Linda once overbaked hers—now she sets a timer! Got a mac and cheese disaster? Tell us how you saved it.

Your Questions, Answered

A: Assemble 1 day ahead—keep covered in the fridge until baking.
Q: What cheese swaps work?
A: Try Gruyère for cheddar or Romano for Parmesan.
Q: Can I halve the recipe?
